Pam Dokolas Collier (nee Dokolas) was born in East Moline, on April 27th, 1956 to Alyce and Lee Dokolas. She enjoyed a brief period of being an only child until her best friend and sister Georgia, and loving little brother Jimmy arrived. She was the best oldest sister, a role she embraced and cherished. Growing up first generation Greek, her childhood was filled with many memories of large family gatherings and events at Assumption Greek Orthodox Church. It should be mentioned that yes, there were many lamb roasts and Pam's favorite movie was "My Big Fat Greek Wedding", as it reminded her so very much of her loving and proud family.
Pam was an exceptional cook. Food was truly her love language. Whether is was a celebration, mourning, or a Sunday family dinner, her wonderful authentic Greek cuisine, or amazing homemade concoctions were known throughout town. We think there were a number of babies born within her circle just to ensure one of her delicious meals and sweet deserts. Her cooking was also renowned at Assumption Greek Orthodox Church, which is no small feat as she learned from the excellent cooks before her, which she regularly gave credit to. Pam was asked to cater at other church dinners in the area for their large fundraisers, which she happily obliged.
Pam retired after 38 years at John Deere and was very active in the community. One of her greatest joys was being a host mom for exchange students for many years. She treasured her communication and return visits from her special girls. She loved participating in the Quad City Breast Cancer Group supporting other survivors and had many friends. She instilled hope in what seemed hopeless situations and never waivered her faith in God and his plan. Pam was a life long member of Assumption Greek Orthodox Church, devoting her time and talents to others. She sang in the Choir and was a member of the Philoptochos Society. During her time volunteering at the Greek Festivals, if she was not cooking, you could find her Greek dancing with her family and friends, her laughter echoing as she called for others to join in. It didn't matter if you were Greek or not, everyone was family and she truly embraced sharing her heritage with others as, "it truly is a blessing to be Greek". The truth is, it truly was a blessing to be loved by Pam.
Pam is survived by her husband Dennis, her beloved children Denny (Molly) Mekus, Erin (Dan) Severs, and Zachary (Rebekah) Sapato, Angie (Bear) Healy, Stephanie (Shawn) Faurote, and Josh (Allie) Collier. Loving Sister to Georgia (Roger) and favorite niece Elianna Lovejoy. Treasured Yia Yia to Darin Severs, Mia and Maximos Mekus, Asher and Della Healy, Jadyn, Maddox and Gabriel Faroute and many cousins, family and friends. The family would like to thank Angie Healy, for her unbelievable resilience, kindness, and care for Pam in her final days.
